I was feeling a little spunky tonight, I probably didn't need any sugar but had one of those "I can't resist" cravings. I found this awesome brownie recipe at FoodBabe.com, she warns you that you won't be able to put these suckers down and she is right! If you don't tell people what's in them, they will never know. Another reason I thought maybe it would be good to try to eliminate nuts in this recipe and try seeds instead is that there are several people that I know out there that have nut allergies. So for all of ya with a nut allergy out there, this dessert is for you!!! I promise you won't be able to eat just one. Yes, from the picture to the right, you can tell, we certainly had a difficult time eating just one. | I chose to change the recipe up just a bit for a couple reasons: one, a while back I attempted to make almond bread and it turned out horrible! I mean horrible like burnt almond butter... so I was a little fearful since the ingredients looks similar. Two, I've been consuming a few too many nuts these days or maybe I'm going nuts. Likely a little of both but in all truthfulness, I consume a mass amounts of nuts (almonds, cashews, pecans) per day. As with anything, you should do everything in moderation. If you're like me and maybe tend to overdue these good for you nuts, I hope you are soaking them to remove all the phytates and tannins. Anyway, enough about nuts, we'll talk more about that in my future post...which may read something like "nourishing your nuts!" |
Chocolate Seed Brownies <Gluten, Grain, Egg White, Nut, Soy Free>
INGREDIENTS: 3/4 cup sunflower butter 1/4 tahini 2 Tbsp flax seed + 4-5 Tbsp water 1 egg yolk (discard the egg whites) 1/2 tsp sea salt 1/2 tsp baking soda 1/2 cup Madahava coconut sugar (I slimmed it just a tad) 1/2 tsp vanilla 1/2 cup "Enjoy Life" mega chocolate chips INSTRUCTIONS: 1. Preheat oven to 350 degrees 2. Line a small rectangular baking pan with parchment paper (I used 8x6) 3. Mix all ingredients except the chocolate chips in a bowl 4. Fold in chocolate chunks and pour batter into pan- you may have to flatten it around pan using a wooden spoon 5. Bake brownies for 25 minutes 6. Let the brownies cool at least 10 minutes before you attempt to cut them | Now for the even better news, you aren't going to go into a sugar coma or feel just down right awful if you eat just one or two of these suckers! I couldn't agree with the Food Babe more, stick to organic ingredients. You send two messages when you buy organic- you care about your own health by making a statement with your dollar AND you care about the health of others by again making a statement with your dolla, holla! You may be shockingly surprised at how little sugar are in these bad boys!
