Lunch... Enough said, today was not my best showing! I had a hard time not snacking most of the day but here is what I ate for you all!
I don't recommend this but this snack started about 1:30-4:30.. Your digestive system takes a lot of energy to digest your food. Its nice to give it a few hour window break! | Dinner: Pictured below and uber quick and easy! Cilantro Broiled Fish from "My Kitchen Cure" by Mee Tracey McCormick (dairy free, gluten free, grain free, soy free, nut free) 2-3 medium sized tilapia (or other white fish) 2 cups cilantro juice of 2 limes (seems to be a theme today) 3 cloves garlic 1 tsp sea salt 1/4 cup olive oil put everything in food processor except fish and EVOO. Puree then add EVOO slowly to make a pesto like consistency. Rinse off fish and then coat with cilantro pesto. I cooked it on broil in the oven but you can use a grill too- about 5 minutes on each side served with a side salad (lettuce, avocado, white onion, evoo, sea salt and black pepper)! |
