Ingredients:
1 cup raw almonds (soaked over night in filtered water)
1 cup raw walnuts (soaked over night in filtered water)
1/2 cup raw pecans (soaked over night in filtered water)
1/2 cup raw brazil nuts (soaked over night in filtered water)
1/4 raw sunflower seeds (sprouted)
1 - 1 1/2 teaspoon sea salt
2-3 Tablespoons honey or maple syrup
1 date (pitted)
1/8 cup organic unfiltered apple juice
1-2 tablespoons organic applesauce
2 tablespoons coconut oil, melted
1 1/2 tablespoons pure vanilla extract
1 tablespoon cinnamon
1 tablespoon grated/minced ginger root (peel)
1 tablespoon shredded, unsweetened coconut
*Place all the nuts, seeds, sea salt, and ginger into food processor and process until all the nuts are size of oats or texture you like. Add the honey or maple syrup, date (optional), apple juice, applesauce, coconut oil, vanilla, and cinnamon. Pulse until combined. If you would like sweeter or lighter play with amounts of honey or maple syrup or add an additional date or two.
*Pour mixture into a bowl, add the coconut, use a spoon to mix together.
*Dehydrator (I think this works best): cover trays with parchment paper (watch this, I've melted some trays- make sure to poke holes in paper), and spread evenly into thin layers amongst 3 trays. Dehydrate for up to 24 hours.
Or Oven: set oven at temperature 170 degree F for 3 hours, turn and flip granola at 2 hours. Turn oven off and let dry as oven cools.
*Enjoy in a pretty bowl with full fat organic coconut milk from a can, homemade almond milk, or yogurt! Eat slowly and savor each bite!
*If you'd like feel free to stir in raisins, cacoa nibs, or cranberries as you'd like. However, this is not recommended if you are struggling with yeast symptoms or are a sugar addict. It only adds sugar!
