Kickin Chicken Salad Recipe
2 lbs chicken, thawed, chopped into bite sized pieces
1/3 cup parsley, chopped
3 celery stalks, chopped
1/2 red onion, chopped
1/4-1/3 cup curry mayo or soy free veganaise
1/8-1/4 cup roasted cashews
spices: turmeric, curry or graham masala, pepper, sea salt
1. fill up large sauce pan with water and bring to a boil
2. chopped thawed chicken and add to sauce pan, boil until chicken is no longer pink in middle
3. while chicken is boiling, chop parsley, celery, onion, and cashews. Add to mixing bowl
4. add mayo or veganaise and stir
5. add spices - I did 1/2 tsp turmeric, 1/2 tsp graham masala, salt and pepper to taste!
6. drain chicken from water, pat dry, and add to bowl
7. stir by hand OR I simply quickly stirred it up in mixer
Serve alone, on top of salad, or in a sandwich!
